Mushroom Pizza with Caramelized Onions and Blue Chees

Pizza dough to make one medium pizza.  (I used a precooked store bought pizza, but you 
     could also use homemade pizza dough)
1 large red onion, thinly sliced
1 clove garlic, minced
1 T. butter
1 T. olive oil
5 medium portabella mushrooms, or 3 large - sliced into chunks
1 cup pizza sauce -- use good quality store bought, or try Michael's sauce.)
1/2 cup crumbled blue cheese
1/4 cup shredded mozzarella cheese
1 t. red pepper flakes
1 t. dried basil
salt and pepper to taste

Preheat oven to 400 degrees

In a heavy skillet, melt butter and add olive oil.  Heat.  Add onions and garlic.  Sauté' over medium heat until
onions are caramelized -- just starting to turn brown.  Remove from skillet to a separate dish.

Return skillet to stove and sauté mushrooms until tender.  Add salt and pepper to taste.

Put dough on lightly floured cookie sheet or a pizza board.

Spread pizza sauce on pizza dough.  Spread mushrooms on top of that.  Add onions, cheeses, pepper
flakes and basil.

Slide pizza onto oven rack.

If your pizza dough is precooked, bake pizza for 20 minutes or until cheese starts to bubble.  If your
pizza dough is uncooked bake for 35 to 40 minutes.  Use the pizza board to easily remove the pizza
from the oven.  Let stand for 10 minutes.  Cut and enjoy!
